How Did This Happen?
Chicago has a way of staying with you...
I learned that the hard way.
After moving from Chicago to San Diego, then back home, then Los Angeles, back home, Florida, home, Seattle, home, etc., etc.—with plenty of miles in between—I kept running into the same problem. Every city had amazing food... but none of them had Chicago.
Square-cut thin crust pizza with a sweet sauce? Impossible to find.
A proper Chicago-style hot dog with mustard and sport peppers? Forget it.
An Italian beef piled high with giardiniera? Almost nonexistent.
No matter where I lived, I was chasing the flavors I grew up with. Eventually, I realized I had two choices: keep searching for Chicago... or build it myself.
So I got to work.
It started with pizza. I spent countless hours recreating the sweet sauce from my favorite neighborhood pizzeria. Once that was right, I developed my own thin-crust dough. Then came the cheese. I imported cheese from Wisconsin, shredded it myself, and blended three different varieties until every bite tasted like home.
The pizza was finally there.
But something was still missing.
The one ingredient that brought everything together. The condiment that belonged on pizza, Italian beefs, sandwiches, eggs, burgers—just about everything.
Giardiniera.
That's when everything changed.
I wasn't just trying to recreate Chicago for myself anymore. I wanted to introduce the rest of the country to what I believe is The Missing Condiment™.
What I thought would take a few months turned into more than a decade of experimenting, tasting, tweaking, and starting over. Batch after batch, friends and family kept asking for more. They told me I had something special.
They were right.
In 2022, I began researching what it would take to turn that passion into a real business. There were plenty of challenges, a few false starts, and a lot of lessons along the way. But eventually the right team came together, and in 2024 Ronnie's Giardiniera officially became a reality.
Today, every jar represents more than vegetables, peppers, olive oil, and spices.
It represents Chicago.
It represents family, persistence, and the belief that great food deserves to be shared.
