
Ronnie's Pepperoni & Cheese Cups
Pepperoni & Cheese Cups are bite-sized, savory snacks made by layering crispy, curled slices of pepperoni into a cup shape, baked in a mini muffin tin filled with your choice of cheese, Ronnie’s Giardiniera and anything else you'd like. As they bake, the pepperoni edges crisp up and the fat renders slightly, forming a salty, crunchy shell that holds gooey, stretchy cheese inside. They're rich, indulgent, and packed with bold flavor—like a crustless mini pizza, with all the good stuff and none of the fluff. Perfect for parties, low-carb snacking, or a guilty-pleasure appetizer.
Ingredients
- 1 Package of large pepperoni or dry salami. You want to get the salami or pepperoni as big as you can (3" round is ideal), because when you push them into the muffin tin, you want them to form a cup and the small ones will not cup - they are too small - and just lay flat in the bottom of the tin.
- 1 Package of smoked provolone cheese, goat cheese, Boursin (or any other cheese you like).
- 1 Jar of Ronnie’s Giardiniera.
Instructions
- Place pepperoni in a mini muffin tin.
- Add your choice of cheese to the pepperoni 'cup'.
- Broil the cheese and pepperoni until the cheese is golden brown and the pepperoni is crisp.
- Remove from oven.
- Top off with Ronnie’s Giardiniera
