Ingredients
For the Sweet Potatoes
- 4 medium sweet potatoes
- Olive oil spray
- Pinch of salt
For the Pumpkin Spice Turkey Chili
- 1 lb ground turkey
- 1 tbsp olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 2–3 cups fresh grape tomatoes, halved (about 1 pint)
- 1 can (15 oz) pumpkin purée
- 1 cup broth (chicken or vegetable)
- 1 tbsp chili powder
- 1 tsp smoked paprika
- ½ tsp cinnamon
- ¼ tsp nutmeg
- ¼ tsp cayenne (optional)
- ½ cup Ronnie’s Giardiniera, drained & chopped
For Serving
- Extra Ronnie’s Giardiniera on top
- Shredded cheese (cheddar or Monterey Jack)
- Sour cream or Greek yogurt
- Pumpkin seeds (pepitas)
- Fresh cilantro
Instructions
1. Air Fry the Sweet Potatoes
• Wash, dry, and pierce sweet potatoes with a fork.
• Spray with olive oil and sprinkle with salt.
• Air fry at 390°F for 35–40 minutes, turning halfway, until fork-tender.
2. Make the Chili
• Heat olive oil in a pot. Add onion + garlic, sauté until fragrant.
• Add ground turkey, cook until browned.
• Stir in chili powder, paprika, cinnamon, nutmeg, and cayenne.
• Add grape tomatoes, cook until they burst and release juices (5–7 minutes).
• Stir in pumpkin purée + broth. Simmer 20–25 minutes until thick.
• Fold in ½ cup chopped Ronnie’s Giardiniera for brightness and tang.
3. Assemble
• Split open air-fried sweet potatoes. Fluff with a fork.
• Ladle turkey chili on top.
• Finish with cheese, sour cream, pumpkin seeds, cilantro, and more giardiniera.
